At least once a week, I try to experiment in my studio-sized kitchen to try to broaden my culinary horizons. The thought of casserole has always been weird to me. It makes me think of old ladies and bad leftovers. To conquer this irrational fear, I decided I had to make one of my own. And what better a time for a hot yummy dish of rice, cheese, broccoli, and more cheese than on these cold winter nights?
You can find the recipe here, but I reserve one small cautionary remark. This dish is definitely a comfort food and should be consumed in small doses to avoid carb overload. The recipe is great. I just added more cayenne pepper for an extra kick and nixed the mushrooms since I’m not too keen on eating from the fungi family. Enjoy!
